So what does hummus bring to the table?
Hummus is high in iron and vitamin C and also has significant amounts of folate and vitamin B6. Chickpeas (or garbanzo beans), the primary ingredient in hummus, are a good source of protein and dietary fiber. And the tahini, which consists mostly of sesame seeds, are an excellent source of the amino acid methionin. This is a great complement to the proteins in the chickpeas. Hummus is a very useful staple in vegetarian and vegan diets. Like other combinations of grains and pulses, it serves as a complete protein when eaten with bread. And BONUS, It’s delicious!
So what does Hummus mean?
Hummus is the Arabic word for ‘chickpeas.’ It has been a favored food of ancient cultures for centuries, and recipes for hummus began appearing in cookbooks published as far back as the 13th century in Cairo. Over the years, many variations have been tried, and many ingredients added to this wonderful dish. But chickpeas and tahini have remained as the core ingredients since ancient times.
A Hummus World Record?
In May of 2010, the Guinness World Record for the largest dish of hummus ever made was awarded to a village in Lebanon. 300 cooks in the village of al-Fanar, near the capital city of Beirut, created this monster dish, which weighed an estimated 23,000 pounds (10,450 kilograms). This doubled the previous record set earlier that year in January 2010 by 50 Israeli Arabs and Jews. This recipe was said to have included eight tons of boiled chick peas, two tons of tahini, two tons of lemon juice, and 154 pounds (70 kg) of olive oil.
1 – 16 oz can garbanzo beans
1/4 cup bean liquid from can, reserved
1.5 tablespoon tahini
2 cloves garlic
1/2 teaspoon salt
2 tablespoon olive oil
3 tablespoons lemon juice
1. Combine all the ingredients, except for the reserved bean liquid, in a food processor.
2. Let the food processor run for a few minutes, processing the ingredients to be as smooth as possible.
3. Slowly add the reserved bean liquid while mixing.
This will create a great, creamy hummus that can be served as a dip for veggies or on pita bread. We like to put it in our pitas with falafels. (This recipe makes 6 servings)
